Vegan Triple Stack

The ridiculous Breakfast Sandwich from McDonald's only VEGAN!
I decided to VEGANIZE the TRIPLE STACK from McDonald’s. When I was doing research on the McGriddle I came across this monstrosity and thought, “Well I guess I gotta make one of those now too!”
For the “Egg” I tried a little experiment that maybe didn’t work out aesthetically, but taste wise it totally slapped as the kids say. I basically just took a ring mold and cut out a circle of tofu, then cut out a slice of the tofu and filled it with Just Egg. You could either just do a slice of tofu or a Just Egg cooked in a ring mold and that would work just fine too.
For the English muffin, most of the ones I see in the store are vegan. The Thomas ones are not unfortunately, but just about every other one I’ve seen is. So just remember to check the label!
And for the vegan sausage patties you can either use store-bought or make some at home with some plant-based meat and spices.
One last note, you will either need a large pan, or 2 medium sized pans for this dish. A double burner skillet would be even better.
Makes 1 Sandwich
1 English muffin
1/2 inch slice of tofu
2-3 Tbsp Just Egg (optional)
1-2 slices vegan bacon
2 slices vegan cheese
1 Tbsp vegan mayo
premade sausage patty (Gardein, Simple Truth etc)
4 ounces plant-based meat (Beyond Meat, Lightlife, etc)
1/4 tsp each of ground sage, smoked paprika, garlic powder
1/2 Tbsp of maple syrup
Salt and pepper to taste
Drain and press your tofu for 20 minutes.
If making breakfast sausage at home, combine the ingredients in a bowl. Then divide into 2 patties.
Slice your tofu about an inch or so. Using a cookie cutter, cut out a circular section about the size of your English muffin. If you are going to add the Just Egg yolk, cut out a pie slice so that it looks like Pac-Man.
Bring a pan up to medium heat with a bit of oil. Add the English muffins and toast until browned, and then set aside.
Add the sausage patties and bacon to the pan and cook for 3 minutes.
While those are cooking add your tofu slice to the pan. If doing the Just Egg yolk, use a ring mold that is the same size as your cookie cutter and fill up the empty pie slice with Just egg.
Flip the bacon and sausage patties. Add a slice of vegan cheese to one patty.
Add the bottom English muffin back to the pan and add the other slice of vegan cheese. Cover to melt cheese. Covering will also help cook the Just egg.
Once cheese has melted and egg is done, assemble as follows from bottom to top: bottom muffin with melted cheese, sausage patty with melted cheese, sausage patty with no cheese, vegan bacon, vegan egg, vegan mayo on top bun!
