Vegan Shrimp Torta

Updated: Jul 26, 2020

Vegan Shrimp? Yes that's right, and in a Torta no less!

Cool Story Time: Back about 10 years or so, my favorite place to get Mexican food in Burbank was a little place called Los Chavos. They had great Shrimp Tacos and also really good Tortas. But for some reason, they didn’t have Shrimp Tortas on the menu. So one day I go up to the owner Raoul, and I say “Hey Raoul, would it be possible for you to make me a Shrimp Torta?” and he looked blankly at me for a few seconds and then went “Haha, no.” So yeah, that’s one of the reasons I made this Shrimp Torta and turns out I was right because this was FAN-FRIGGIN-TASTIC!⁣⁣

The vegan shrimp are made by a company called All Vegetarian. You can find it on their website HERE

For the roll, I used a Telera roll, you can also use a Bolillo. If you can't find either of those, a ciabatta or french roll could work fine too. Heck, even a sturdy burger bun could work!

Makes 1 Sandwich

  • 5 vegan shrimp

  • 1/4 red bell pepper (sliced)

  • 1/4 green bell pepper (sliced)

  • 1/4 cup sliced onions

  • 1/2 avocado sliced

  • 1/2 tsp garlic salt

  • 1/2 tsp chili powder

  • 1/2 tsp smoked paprika

  • Dash of cayenne

  • Juice of 1/2 a lime

  • 2 Tbsp vegan sour cream

  • 2 Tbsp Herdez Guacamole Salsa (optional)

  • 1 Telera roll

Chipotle Crema

  • 2 Tbsp vegan sour cream

  • 1/4 tsp chipotle powder

  • 1/4 tsp smoked paprika

  • Juice of 1/2 a lime

  1. Combine ingredients for chipotle crema and set aside.

  2. Heat up some oil over medium heat. Add the onions and bell peppers and cook for 2-3 minutes, until onions start to turn translucent.

  3. Add vegan shrimp, garlic salt, chili powder and cayenne to the pan and cook until the veggies and shrimp have a browned. I like to get them a little blackened even, so if you are into that, go for it!

  4. Once the veggies and shrimp are cooked to your liking, you can either remove from the pan or scoot them to the side and add your telera roll. If the pan is dry, add a little oil or vegan butter. We want to grill the bread before assembling the torta, nothing worse than a cold, dry roll!

  5. After the roll has been grilled remove from the pan and assemble the torta. First spread some of the chipotle crema on the bottom roll, add the Herdez salsa if you're using it. Then add the avocado, shrimp, and veggies. Give the entire thing a squirt of lime. Spread some vegan sour cream on the top roll and place it on top.

  6. ENJOY!
