Vegan Pepper Belly Burger

What happens when you can't decide between a Pepper Belly and Burger? You make this!
Don't feel bad if you don't know what a Pepper Belly is. I didn't know until a few years ago, but am I glad I found out! It's essentially a bag of Fritos (which are accidentally vegan) filled with chili, cheese, onions, sour cream and whatever else you wanna put in there!
For this burger I kept it pretty simple and added the traditional toppings plus a little cilantro. If having chips on a burger sounds weird to you, I urge you to try it! The crunchy, salty goodness pairs well with everything else, I swear it!

RECIPE
Makes 1 Burger
4 oz patty of plant-based meat
1 slice vegan cheese
1/4 cup vegan cheese shreds
1/4 cup chili (homemade or canned is fine)
1/3 cup Fritos chips
2 Tbsp vegan sour cream
1 Tbsp chopped onion
1 Tbsp chopped cilantro
1 hamburger bun
INSTRUCTIONS
Prep your veggies, chop onions and cilantro.
Heat up chili in a pot and keep warm.
Grill buns in a bit of oil or vegan butter until golden brown. Set aside.
Press your burger patty so it matches the circumference of your buns. Season with salt and pepper. Then over medium high heat, grill on each side for 3-4 minutes.
After you flip the patty, add a slice of cheese and cover with a melting dome after adding a tablespoon of water to pan. The steam from the water will help melt the cheese.
Once Cheese is melted, assemble as follows; burger patty, chili, cheese shreds, onions, cilantro, Fritos, sour cream on top bun!
