Vegan Papas Breakfast Burrito

The iconic LA Breakfast Burrito gets VEGANIZED!
Here’s my Veganized version of the Papas Breakfast Burrito from Tacos Villa Corona in the neighborhood of Atwater Village (Los Angeles). If you search for “Best Breakfast Burrito in LA,” Villa Corona is on just about every list and it’s all thanks to their Burritos. I used to get one of these every other morning on my way to work. It was a bit of comfort from the likely hangover I had. They have no seating so you either have to get it to go, or eat it on your tailgate like I did.
For the vegan egg, you can use Just Egg, or a tofu scramble.

Makes 1 Burrito
1 large flour tortilla
1/3 cup diced potatoes (either frozen or fresh)
1/2 cup vegan egg or tofu scramble
1/4 cup vegan cheese shreds
1/2 cup baby spinach
1-2 strips vegan bacon
If using fresh potatoes, dice them up and microwave for 7 minutes. Otherwise skip to next step.
Heat some oil in a large nonstick pan over medium heat and cook your potatoes.
While potatoes cook, dice up your bacon.
Once potatoes have started to brown (should be about 7-8 minutes), add your vegan bacon to the pan. Try to keep everything on the pan separated, cook things in their own section on the pan.
After about a minute or so, add your vegan egg or tofu scramble to the pan. Cook for about 2 minutes.
Add your spinach and cook until wilted.
Continue to cook everything, stirring it around to make sure it doesn't burn.
Heat up the tortilla either over a stove burner, or in the microwave for about 1 minute.
Pile everything in the tortilla in this order; potatoes, bacon, spinach, cheese, vegan egg. Wrap the tortilla up. If you want, you can grill the burrito on the pan for a few minutes to brown it and help the cheese melt.
