Vegan Nugget Po' Boy & Remoulade

Let's put some Vegan Chik'n Nuggets in a Po' Boy! The Remoulade is so good too! I could eat it with a spoon!

I know it's not super traditional to put Vegan Chik'n Nuggets in a Po' Boy (and I might be breaking the law), but you gotta believe me when I say that it absolutely works! Plus with the Remoulade, this sandwich hit the spot! I ate one for lunch and had to eat one for dinner as well! I couldn't stop thinking about it, in fact, now that I'm writing this, I want one again!

The remoulade comes together real quick, and the Alpha Nuggets are super easy to make. This is a great quick lunch or dinner, and it more than delivers for the effort it takes!

For the vegan Nuggets, I used the Chik'n Nuggets by Alpha Foods. They are as easy to prepare as they are delicious!

Makes 2 Sandwiches

Cooking Time: 15 minutes


  • 1 package Alpha Foods Chik'n Nuggets

  • 2 Po Boy Rolls (French Bread)

  • Tomato Slices

  • Shredded Lettuce

  • Cajun Seasoning


Makes Extra Sauce 

  • 1/2 cup Vegan Mayo

  • 1 Tbsp Dijon Mustard

  • 1 Tbsp Pickle Brine (from a pickle jar)

  • 1 Tbsp Hot Sauce

  • 1 tsp Prepared Horseradish

  • 1 tsp Cajun Seasoning

  • 2 Cloves Garlic (minced)


  1. Combine ingredients for Remoulade and refrigerate. 

  2. Cook Nuggets according to package instructions, or Air Fry at 380 degrees for 10 minutes, flipping halfway through.

  3. Optional (but recommended) after Nuggets are cooked, spray them with a bit of cooking oil and toss them in a bowl with some Cajun Seasoning.

  4. Split the rolls in half lengthwise, then add tomato, lettuce and the nuggets. Drizzle a generous portion of the remoulade.

  5. ENJOY!
