Vegan Moons Over My Hammy


The classic Denny's Breakfast Sandwich has been VEGANIZED!


As a no good teenager, me and my friends would spend countless hours at Denny's. We might've indulged in some of God's Green Leaf beforehand, and naturally, I would order one of these. It's kind of a strange combination, but it works so dang well! This recipe is so simple I debated making a post for it, but after searching for "Vegan Moons Over My Hammy" and finding nothing in the search results, I figured I might as well fill that void!


All you need is some Texas Toast (or sourdough is good too), a Tofu Scramble (I've made this with Just Egg and it was super good too!) some vegan Ham, I used Yves brand, and then two slices of cheese, ideally cheddar and a white cheese like provolone or the smoked gouda that I used.


The only trick is to get everything to melt without burning the bread. One thing I've started doing, is before adding the cheese on top of my bread to melt, I'll throw it directly on the griddle to melt it a bit. This can be tricky as you don't want it to melt so much that it falls apart when you try to pick it up. It took me a few tries. But after that simply add it on top of the bread or tofu scramble and then cover with a melting dome and you should be good!



RECIPE

Makes 1 sandwich

  • Two slices Texas Toast

  • 1 slice of vegan cheddar cheese

  • 1 slice of vegan smoked gouda cheese

  • 10 slices of vegan ham


Tofu Scramble

  • 5 oz extra firm tofu (pressed)

  • 1 - 2 Tbsp plant milk

  • 1 tsp nutritional yeast

  • 1/8 tsp garlic salt

  • 1/8 tsp turmeric

  • Dash of smoked paprika

  • Black pepper to taste

  • Black salt to taste (optional)


INSTRUCTIONS


  1. Press your tofu if you haven't already.

  2. Crumble your tofu into a bowl. Add all the seasoning except the milk and except black salt if using. Then using the back of a fork, crumble the tofu finer while mixing in the seasoning. Set aside.

  3. If you have a double burner griddle, this is a good time to use it, otherwise use 2 pans, or do things in batches.

  4. In some oil or vegan butter, grill your Texas Toast until browned in a bit of oil or vegan butter.

  5. While the toast is grilling, add the tofu scramble as well and cook for a bit.

  6. Add your ham slices to the griddle.

  7. You can pre-melt your cheese by placing it on the grill for a few seconds, I typically move it around lightly with my hand so it doesn't stick. This is optional, but helps get the cheese nice and melted. Do this quickly with step 8.

  8. Once one side of the Texas Toast is browned, flip and add the piece of white vegan cheese to one. Then top with the ham. Cover with a melting dome to melt the cheese.

  9. Add a slice of cheddar cheese on top of the tofu scramble and cover with a melting dome as well.

  10. Once cheese is melted, add the tofu scramble and melted cheddar on top of the ham and cheese, then top with the other piece of Texas Toast.

  11. ENJOY!
