Vegan McGriddles

What's better than vegan eggs, cheese and sausage sandwiched between two pancakes with maple syrup inside? Nothing. Literally Nothing!


Before going vegan, I didn't go to McDonald's very often. Maybe if I was traveling and was super hungry and had little to no options I would grab a McMuffin. I never got to try a McGriddle, but I can understand the hype, the combination of flavors is a perfect blend of sweet and savory!


I've made these a couple times and as with most recipes, there's a few variations you can try out. You can either use a premade vegan breakfast sausage patty, or make one using some plant-based meat and some spices. You can also use some of my RICE PAPER BACON, recipe found HERE!


Additionally, for the vegan egg, if you have access to it, you can use Just Egg, or even their Folded Egg as I did, or a simple tofu scramble would work too!

For the pancakes, I used some Birch Bender mix but you could use your favorite vegan pancake recipe. I like the one from Tasty which you can see HERE. To get the syrup inside the pancake, I simply ladle my pancake into a ring mold, then drop about a 1/2 tablespoon of syrup into the middle of the batter. After you flip it, it should cook and seal the syrup inside!


The only special equipment you need for this is either a ring mold or one of those single egg frying pans in order to achieve the egg patty shape. I find it's easier to use the same ring molds for the pancakes in order to ensure they are the same size as the egg. Instead of Just Egg or a tofu scramble, you could also use a slice of firm tofu and then cut a circular shape using a 4 inch cookie cutter.

RECIPE

Makes 1 Sandwich


  • 2 pancakes about 4 inches wide (use your favorite vegan pancake mix or recipe)

  • 1 Tbsp maple syrup

  • 1 slice vegan cheese

  • 4 ounces Just Egg or Tofu Scramble

  • a few slices of Rice Paper Bacon

Breakfast Sausage

  • premade sausage patty (Gardein, Simple Truth etc)

OR...

  • 4 ounces plant-based meat (Beyond Meat, Lightlife, etc)

  • 1/4 tsp each of ground sage, smoked paprika, garlic powder

  • 1/2 Tbsp of maple syrup

  • Salt and pepper to taste

Chipotle Mayo

  • 1/2 Tbsp vegan mayo

  • 1/2 Tbsp diced chipotles in adobo sauce

  • Dash of smoked paprika

Sriracha Maple Syrup

  • 1/2 Tbsp Sriracha

  • 1/2 Tbsp maple syrup


INSTRUCTIONS


  1. Preheat oven to 200° F (to keep pancakes warm)

  2. Combine ingredients for whichever sauce you want to make and set aside.

  3. Make pancakes according to mix or recipe. I highly recommend using a 4 inch ring mold, unless you are a pancake master and can ladle 2 perfectly matched pancakes (I am not a pancake master)

  4. Add about 1/2 a tablespoon of maple syrup to the middle of the pancakes before flipping. This should lock some syrup in the middle.

  5. Once pancakes are cooked, set aside and keep warm in the oven. Don't stack them though, keep them in a single layer, otherwise they will steam and become limp and awful.

  6. If using store-bought breakfast sausage, cook according to instructions and keep warm in oven. Skip to step 8. Same if you are using some Rice Paper Bacon that you already made.

  7. If making your own sausage, combine breakfast sausage ingredients. Roll into a big meatball.

  8. Heat up a little oil in a pan over medium heat. Once the pan is hot, take your meatball and place it in the pan. Using a spatula, SMASH the meatball into a patty. Cook for 3-4 minutes.

  9. Flip patty and cook for an additional 3-4 minutes. Set aside in oven to keep warm.

  10. To make your vegan egg, use a single egg frying pan or the same ring mold you used for your pancakes to form an egg patty. If using an egg pan, cook over low-medium heat as the pan heats up quickly. Otherwise cook over medium heat. Stir the egg with a spatula occasionally to make sure it doesn't stick or get brown. Once it's cooked to desired consistency, remove from heat.

  11. To melt cheese on pancake, remove one pancake from the oven, place it on the pan you were just cooking the vegan egg with. Top with cheese, add a tablespoon of water to pan and cover immediately. The steam from the water will help melt the cheese.

  12. Once cheese is melted, remove from heat.

  13. Assemble as follows, pancake with melted cheese, sausage, vegan egg, sauce of choice, top pancake.

  14. ENJOY!
