Vegan Green Chile Burger

The Classic All-Time Favorite by Whataburger only VEGAN!
So I had a request to veganize more WHATABURGER sandwiches, and who am I to mess with Texas? I did the Honey Butter Chick’n Biscuit and the new Breakfast Burger already, but as I did my research into it, I realized I probably will have to do the entire Whataburger Menu. So expect to see more WHATAVEGANBURGERS in the future!
For this guy, I took two 3 oz. Impossible Patties, 2 Slices of Violife Cheese (Cheddar and Smoked Provolone) some Fire Roasted Anaheim Chiles and then a slathering of Chipotle Mayo. The original Burger doesn’t have any sort of sauce, and I figured if I’m gonna make it vegan I might as well keep improving it and adding some sauce as well! And I was right, this thing was FRIGGIN TASTY as HECK! Can’t wait for Hatch Chiles to be back in season as I’ll have to recreate it again with those!

Two (3 oz.) patties of plant-based meat
Two Slices of Vegan Cheese (try to use 1 white and 1 yellow cheese)
1 Anaheim Chile
1 Big Hamburger Bun
1 Tbsp of Vegan Mayo (I used Follow Your Heart)
1 Tbsp of Chopped Chipotles in Adobo Sauce (I used La Costeña)
Fire roast the Chile, I used my Stove Top. Simply roast it over the flame until the skin is blackened. Let it cool to the touch (or run under cold water) and remove the black skin. Dice it up! There will be a bit leftover depending on the size of your chile. Feel free to use in other dishes or eat it with a spoon if you’re a MANIAC.
Prepare the sauce by mixing the mayo with the chipotles in adobo until it’s completely combined.
Grill your buns on a pan over medium heat in a little oil or vegan butter. Once they have browned a bit, set aside.
Season the patties as you wish, then add to the pan over medium high heat. Grill on each side for about 3 minutes or until you have some nice CRUSTIFICATION.
When you flip the patties, add the white slice of cheese to one, and then, put the bottom bun back in the pan, add the cheddar slice to it and then throw in a little bit of water and cover immediately. The steam from the water will help melt the cheese.
After the Cheese is melted, remove from pan, and assemble as shown in the photo.
