Vegan Elvis Sandwich

Elvis Presley's favorite Sandwich, but on French Toast and VEGANIZED!
Look, I get it, Peanut Butter, Banana and Bacon sandwiches sound weird, but the truth is they are delicious and if you disagree, I'm sorry, but you're just wrong. They say 50,000 Elvis fans can't be wrong, and I'm pretty sure he ate 50,000 of these, and therefore he's not wrong. I don't know if that's scientifically sound, but my gut says yes. Speaking of my gut, this thing was rich and decadent as a bedazzled polyester suit in the summer!
I used some Texas Toast, and made it French Toast with a vegan milk and egg batter, then slapped a bunch of peanut butter on there, some bananas and some vegan bacon! For the bacon, I used the recipe for daikon bacon by Sauce Stache. You can find it HERE. You can also just use store bought vegan bacon too of course. For the vegan egg, I used Just Egg. You could also just use a bit more plant milk and add some apple cider vinegar to create a vegan buttermilk.
You can eat this as is, or top it with some maple syrup and powdered sugar, the choice is yours! Either way, this was a perfect blend of sweet and savory, and I highly suggest giving it a try!
Makes 1 sandwich
Two slices Texas Toast
1 banana (sliced)
6 slices vegan bacon
2-4 Tbsp peanut butter
French Toast Batter
1/4 Tbsp flour
1/4 cup plant milk
3 Tbsp vegan egg (if not using vegan egg, add a couple more tablespoons of plant milk and then about a 1/2 Tbsp of apple cider vinegar)
1 Tbsp maple syrup
Dash of cinnamon, vanilla extract and sugar.
Powdered sugar (make sure it's vegan)
If making the daikon bacon, do so first and set aside.
Prepare the French Toast batter by combining all the ingredients and whisking til smooth. Heat up a pan over medium heat.
Dip each piece of Texas toast in the batter and coat thoroughly, add to the pan and cook along with your vegan bacon. Make sure you check so it doesn't burn, you want it to get nice and browned.
If using store bought bacon, cook in another pan at the same time.
Once bacon and French toast are cooked and browned, assemble sandwich as follows from bottom to top: Toast, peanut butter, bananas, vegan bacon, peanut butter, toast! Feel free to add some maple syrup and powdered sugar. Can be eaten with your hands or a knife and fork. I went with my hands because I'm a maniac!
