Vegan Chopped Cheese

The ICONIC New York Sandwich, but VEGAN!

Living my entire life in Southern California, I had never heard of a Chopped Cheese until a few folks requested I make one. Within the first five minutes of researching it, I knew I had to whip one up as soon as possible!

At first, you might think it's like a Philly Cheesesteak, but you'd be wrong. It's really more like an amazing Cheeseburger on a hero roll, and that's the reason why I fell in love with it! This was the first time I made one of these and I am pretty certain they will become a regular thing for me. They're so dang easy and delicious to make! So if you've never had one, or if you miss them, then get on this recipe!

If you can, get or make a decent roll. I got mine from a NY style deli out here in LA. Typically mustard, ketchup and mayo are the condiments of choice, so I just made a burger sauce utilizing all three.

Other than that, it's just a matter of cooking a burger patty, and then chopping it up. You can customize this however you want, but I do recommend keeping it simple.

Makes 1 sandwich

  • 1 Hoagie Roll

  • 6 oz plant based meat

  • Adobo seasoning to taste

  • 1/2 cup chopped onion

  • 2 - 3 slices vegan cheese

  • tomato slices

  • shredded iceberg lettuce

  • vegan mayo

  • ketchup

  • mustard

  • pickle brine


  1. Make the sauce by combining some vegan mayo, ketchup, mustard and a little pickle brine. Set aside.

  2. Toast your roll in a skillet, you can use another skillet or a sandwich press to help it along.

  3. Over medium high heat, grill your onions for a few minutes until translucent. Scooch to the side.

  4. Form your plant based meat into a patty and add to the pan. Season liberally with the adobo seasoning.

  5. After a few minutes, flip your patty, and grill for another 3 minutes or so.

  6. Chop up your patty as fine as you like and combine the meat and onions together. Cook for a minute.

  7. Shape your meat and onions into rectangular shape to match your roll. Add 2 - 3 slices of vegan cheese on top. Then add a little water to the pan and cover to steam and melt the cheese.

  8. Once cheese has melted, slather some sauce on your roll, add your cheesy meat, some lettuce, tomato and whatever else you want.

  9. ENJOY!
