Vegan Cheese Sauce

A delicious and easy cheesy sauce that you can use in a plethora of ways!


This is quite honestly some of the best vegan cheese I’ve ever had! I’ve tried it on a few different dishes such as a baked potato, mac n’ cheese and nachos and it works perfectly! It’s totally versatile and will work on any dish that non-vegan cheese would.


I’ve tried other cheese sauces made with potatoes and carrots, tofu, nuts and they are great, but they never felt like something truly cheesy to me. Not that there’s anything wrong with that, I’m sure I’ll make a vegetable based cheese sauce soon too. But for this, I really wanted something that could match the cheese sauce that I had grown up on. So I thought, why not just make a sauce using vegan versions of butter, milk and cheese? Turns out, I was right!



Now, not only do I think this sauce accomplishes matching the cheesiness of the sauce I grew up on, but I think it goes beyond with the (totally optional) addition of some chipotle peppers in adobo sauce. If you can find the diced peppers, go for that. I use La Costeña brand. If you can’t find the diced ones, whole ones are fine. You’ll just have to chop them up yourself. My Texas girlfriend says it reminds her of Queso with the addition of the chipotles, however, if you don’t like spicy, feel free to leave them out. The sauce is great without 'em!

RECIPE

  • 1/4 cup vegan butter

  • 3 Tbsp Flour

  • 2 cups plant-milk

  • 8 oz vegan cheese shreds

  • 2 Tbsp nutritional yeast

  • 1/2 tsp garlic salt

  • 1/2 tsp turmeric

  • 1 tsp smoked paprika

  • 1/4 tsp cumin

  • 1/2 tsp umami seasoning (optional)

  • 2 Tbsp chipotle in adobo sauce (optional)

  • Salt & pepper to taste


INSTRUCTIONS


  1. Melt butter in a pan over medium heat.

  2. Add flour a tablespoon at a time and whisk in between each tablespoon. Once all flour has been added whisk thoroughly and cook for 1 minute.

  3. Add plant milk 1/2 cup at a time and whisk in between each 1/2 cup. Bring to a simmer.

  4. Add vegan cheese and stir until melted.

  5. Add all the seasonings and adjust to your taste.

  6. Combine cheese sauce with pasta and serve immediately.

  7. ENJOY!


The Cheese can be stored in the fridge for 2-3 days but is best served right away. Have fun!
