Vegan Bun Taco
Today, we’re making a vegan version of Del Taco’s famous Bun Taco!
Now, if you’re scratching your head because you haven’t heard of a Bun Taco it’s probably because they aren’t technically on the menu anymore, however, they will still make you one if you request it. And you can even order these vegan with the Beyond Meat, but you have to hold the cheese and sauce (and what fun is that, hence my Vegan Version!) The Del Sauce is one of my favorites from my fast food days. Maybe one day Del Taco will make a vegan version, but for now, we can make this!
Makes 1 Bun Taco
4 oz plant-based meat (crumbled)
1/2 Tbsp taco seasoning (or equal parts chipotle powder, chili powder, cumin, garlic powder, and smoked paprika)
1/3 cup vegan cheese shreds
1/3 cup shredded lettuce
1-2 slices tomato
1 sesame seed bun
1 Tbsp vegan mayo
1/2 Tbsp ketchup
1/2 Tbsp lime juice
1/2 Tbsp plant milk
1/2 tsp apple cider vinegar
Let's make the Del Sauce first. Combine the plant milk and apple cider vinegar. Let them rest for a couple minutes, then add the rest of the sauce ingredients. Mix thoroughly and set aside.
Prepare your veggies, shred lettuce, slice tomato.
Grill your buns on a pan over medium heat in a little oil or vegan butter. Once they have browned a bit, set aside.
Add the crumbled plant-based meat to a pan over medium heat and season. Once the meat is browned, remove from heat.
Assemble Bun Taco as follows from bottom to top: Del sauce, meat, cheese, tomato, lettuce, more sauce!
