Vegan Breakfast Torta

A Vegan Breakfast Torta is what dreams are made of. Which is great because you can eat this as soon as you wake up from dreaming about Breakfast Tortas!


I’ve eaten a heckova lot of breakfast sandwiches in my day, and I’ve eaten my fair share of tortas too. But for some strange reason, I’ve never come across a breakfast torta! Not sure why these aren’t more ubiquitous, but if I was in elected office I would mandate that breakfast tortas be promoted from coast to coast.


If you don’t have access to telera or bolillo rolls, which is what a torta usually comes on, you can certainly make these on a ciabatta or French roll. It will still be delicious!


This a good and hearty breakfast, perfect if you are going on a hike or doing something active, but also if you are just sitting around the house, this works in that situation too!


For the tofu scramble, my recipe can be found HERE. You can either make the full recipe and have leftover tofu scramble (I prefer to do this and then I can just reheat the scramble in whatever dish I want) or adjust it to whatever you need. I also have a single serving recipe if you're just making one torta.




RECIPE

Makes 1 Sandwich

  • 1 telera or bolillo roll

  • 1/2 cup tofu scramble (click HERE for my recipe)

  • 1 frozen hash brown

  • 2 slices vegan bacon

  • 1 slice vegan cheese

  • 1/2 an avocado, sliced or mashed

  • 2 Tbsp salsa of choice

Chipotle Crema

  • 2 Tbsp vegan sour cream

  • 1/4 tsp chipotle powder

  • 1/4 tsp smoked paprika

  • Juice of 1/2 a lime

INSTRUCTIONS

  1. Combine all ingredients for the chipotle crema and set aside.

  2. Grill your roll in a little oil and set aside.

  3. On a pan over medium heat, cook your hash brown. Since it takes the longest, let it cook for about 3 minutes, then add the vegan bacon.

  4. Cook the bacon and hash brown for a few minutes, make sure neither of them get too browned or burnt. Add in the tofu scramble and cook as well.

  5. Smash the hash brown a little with a spatula. Then top the hash brown with a slice of cheese and cover with a melting dome to melt the cheese.

  6. Once the cheese is melted and the bacon and tofu scramble are cooked and warmed through, assemble the torta as follows from bottom to top; avocado, hash brown with melted cheese, vegan bacon, tofu scramble, and then drizzle the whole thing with the chipotle crema and salsa. Put the top bun on and DIG IN!
