Vegan Breakfast Fries

If you've ever wanted Fries for Breakfast, this is the dish for you bud!
So I was thinking, we’ve all seen Chili Fries, Carne Asada Fries, Animal Fries etc, but I’ve never seen Breakfast Fries. Which is kinda weird seeing as fries are just potatoes and we put potatoes on breakfast dishes like 90% of the time. In any case, I loaded up some Crinkle Cut Fries with Soyrizo, Easy Cheesy Tofu Scramble, Cheese Sauce and some Cilantro and Chives! Def could add some hot sauce and maybe sour cream, pickled jalapeños, onions really the sky's the limit!
Now I realize this recipe looks quite long, and that's really because it's kinda three recipes in one. I have my recipe for my cheese sauce and tofu scramble as well as the rest of the instructions. However, the Cheese Sauce recipe has enough for leftovers, and the tofu scramble is fairly easy and comes together quickly! I've also included a single serving recipe of the tofu scramble in case you want to scale the amount to what you need.
This is definitely a weekend brunch idea where you have more time and aren't rushing to get to work, but either way I guarantee the time put in is worth it!

Makes 2 Servings (with leftover Tofu Scramble and Cheese Sauce)
Half a bag of Frozen Fries
6 oz Soyrizo
2 Tbsp chopped cilantro
Additional Topping Ideas
Onions (white, green, pickled)
1/4 cup vegan butter
3 Tbsp Flour
2 cups plant-milk
2 cups vegan cheese shreds
2 Tbsp nutritional yeast
1/2 tsp garlic salt
1/2 tsp turmeric
1 tsp smoked paprika
1/4 tsp cumin
2 Tbsp chipotle in adobo sauce (optional)
1/2 tsp umami seasoning (optional)
14 oz block of medium firm or extra firm tofu
1/2 cup vegan cheese shreds
1/4 - 1/2 cup plant milk
2 Tbsp nutritional yeast
1 tsp garlic salt
1/4 tsp turmeric
1/4 tsp smoked paprika
1/4 tsp black pepper
Black Salt to taste (optional)
RECIPE for Single Serving of Tofu Scramble
3 oz medium firm tofu
Pinch of cheese shreds
1 Tbsp plant milk
1 tsp nutritional yeast
1/8 tsp garlic salt
1/8 tsp turmeric
Dash of smoked paprika
Black pepper to taste
Black salt to taste (optional)
Preheat oven and cook fries according to package instructions.
Pat tofu dry with paper or tea towels. Gently squeeze out any excess liquid. Then, press tofu in a tofu press or using something heavy like a cast iron skillet for at least 20 minutes.
While tofu presses, let’s make the cheese sauce. Melt butter in a pan over medium heat.
Add flour a tablespoon at a time and whisk in between each tablespoon. Once all the flour has been added whisk thoroughly and cook for 1 minute.
Add plant milk 1/2 cup at a time and whisk in between each 1/2 cup.
Add vegan cheese and stir until melted.
Add all the seasonings and adjust to your taste. Keep warm on low, stirring occasionally.
Now let’s make the tofu scramble. Remove the tofu from the press and gently pat it dry.
Using your hands, crumble tofu into a large mixing bowl. For a finer texture, crumble with the back of a fork.
Add all seasoning (except black salt) and mix until combined.
Heat up a little bit of oil over medium heat. We're gonna cook the soyrizo and tofu scramble, but try to keep them separated on the pan. The soyrizo needs a couple more minutes of cooking time so cook that for 2-3 minutes before adding the tofu.
Add tofu and cook for 2 minutes, stirring occasionally.
Add plant milk to tofu scramble. If you are unsure how soft you want the scramble to be, add a tablespoon at a time until you get desired consistency.
Add vegan cheese to tofu scramble and stir until cheese has melted (about 1-2 minutes).
Keep an eye on the soyrizo and make sure it doesn't burn. We want a nice browning on most of it.
Once the cheese has melted remove from heat. If using, add black salt (do a dash at a time to make sure you don't overpower the tofu scramble with it, it's funky stuff!)
Top cooked fries with soyrizo, tofu scramble and cheese sauce! Add any additional toppings that you want!
