Vegan Big n' Spicy Mac
It's like a Vegan Big Mac, BUT Spicy!
There isn't much to say about this, it's pretty simple! A classic Big Mac style burger but with a few modifications. I subbed out pickles for grilled jalapeños and chipotle mayo instead of burger sauce. I also added in some cilantro and seasoned the burger patties with taco seasoning!
This thing might actually be better than the original Big Mac recipe. Maybe I'm a sucker for spicy stuff, but to me, this hit all the notes of the classic burger and then some with the added heat! If you like spicy, this is for you!
Makes 1 Sandwich
6 ounces of plant based meat, formed into 2 equal sized patties
1 slice vegan cheese
1/2 cup shredded lettuce
1 jalapeño, seeded and sliced
2 Tbsp chopped onion
2 Tbsp chopped cilantro
1 sesame bun + bottom half of another bun
Taco seasoning to taste (if you don't have taco seasoning, use equal parts chili powder, cumin, garlic powder and smoked paprika)
1 Tbsp vegan mayo
1/2 Tbsp chipotle in adobo sauce
Squeeze of lime
Combine ingredients for chipotle mayo and set aside.
Chop your lettuce, onions and cilantro and set aside.
De-seed the jalapeño and cut into rings.
To prepare your middle bun, use a serrated knife and shave off just the bottom of the extra bottom bun.
Grill buns in a bit of oil or vegan butter until golden brown. Set aside.
Grill jalapeño rings over medium heat for a few minutes until they are nice and charred. Set aside.
Press your burger patties so they match the circumference of your buns. Season with taco seasoning. Then over medium high heat, grill on each side for 3-4 minutes.
After you flip the patties, add a slice of cheese to one and cover with a melting dome.
Once Cheese is melted, assemble as follows; bottom bun, chipotle mayo, lettuce, patty w/ cheese, middle bun, chipotle mayo, lettuce, cilantro, jalapeños, patty, onions, chipotle mayo, top bun.
