Vegan BBQ Chick'n Mac n' Cheese

Vegan Mac n' Cheese topped with some BBQ Chick'n Nuggets might be the smartest thing I've done all month!

Back in the 80s / 90s there were these commercials for Reese's Peanut Butter cups where somebody would be walking eating some peanut butter, and another person was walking eating some chocolate, they would bump into each other and combine their foods and one would invariably say "hey you got your chocolate in my peanut butter!" and thus the Reese's was born. This is like that but with vegan mac n' cheese and chick'n nuggets!

Seriously, this was the tastiest thing I've made in quite a while. BBQ sauce and Cheese just go together so well, which is interesting because you don't see a lot of BBQ stuff with cheese on it! Not sure why, they complement each other so well!

For the nuggets, I used the Chik'n Nuggets by Alpha Foods. They are as easy to prepare as they are delicious! For this recipe I air fried them and then tossed them in some BBQ sauce and it worked out brilliantly!

Makes 4 Servings

Cooking Time: 30 minutes

  • 1 Package Alpha Foods Chik'n Nuggets

  • 1/2 cup bbq sauce

  • 8 oz pasta (Elbow Mac or Cavatappi)

  • 1/4 cup vegan butter

  • 3 Tbsp Flour

  • 2 cups plant-milk

  • 8 oz vegan cheese shreds

  • 2 Tbsp nutritional yeast

  • 1/2 tsp garlic salt

  • 1/2 tsp turmeric

  • 1 tsp smoked paprika

  • Salt & pepper to taste

Additional Toppings

  • Vegan Ranch

  • Green Onions


  1. Cook pasta according to package instructions.

  2. Cook Chik'n nuggets according to package instructions OR cook in an air fryer at 390 degrees for 14-16 minutes, flipping halfway through.

  3. Melt butter in a pan over medium heat.

  4. Add flour a tablespoon at a time and whisk in between each tablespoon. Once all flour has been added whisk thoroughly and cook for 1 minute.

  5. Add plant milk 1/2 cup at a time and whisk in between each 1/2 cup. Bring to a simmer.

  6. Add vegan cheese and stir until melted.

  7. Add all the seasonings and adjust to your taste.

  8. Combine cheese sauce with pasta.

  9. After Nuggets are cooked, place them in a large mixing bowl with the BBQ sauce, and toss to coat the nuggets.

  10. Top the Mac n' Cheese with the Nuggets, more BBQ sauce, or vegan ranch or anything else you like!
