Yes that's right. A VEGAN BACONATOR!
I don't know why, but before going vegan I didn't eat too often at Wendy's. They weren't as ubiquitous as some of the other fast food joints I used to haunt, but every time I went I remember thinking "I should go to Wendy's more often!" Well seeing as I'm vegan now, and they don't currently have any vegan burgers, I guess the only option is to make some vegan Wendy's for ourself!
The star of this show is obviously the bacon. I mean, the iconic square patties are cool, but taste wise, they are the same as round patties. For this bacon recipe, I'm using Rice Paper, which is a fairly common vessel for vegan bacon. It's super tasty, easy to make and relatively cheap! I highly suggest giving it a go.

1 burger bun
4 or 6 ounces of plant based meat (divided)
6 - 8 slices of VEGAN BACON
2 slices of vegan cheese
Make the Rice Paper Bacon first, follow my recipe linked above.
Shape your patties into squares. You can do this by using parchment or wax paper to mold them into squares. Make sure they are big enough for your buns. If you have a square mold, even better, use that too!
Heat up a skillet over medium heat and add the buns. Add some vegan butter to the pan, then once it melts a little, brush some of the butter on top of the buns. Whatever butter is left over, you can soak up with the bottom of the buns. Grill until golden brown and then set aside. Note: the brushing is optional, but either way grill your buns!
Grill your burger patties for 3-4 minutes then flip.
After you flip your patties, add a slice of vegan cheese to each, then add a Tbsp or so of water to the pan, and cover immediately. The steam should help melt the cheese.
Once cheese has melted (about 3-4 minutes) remove from heat.
Assemble burger as follows from bottom to top: vegan mayo, burger patty with cheese, 3-4 slices vegan bacon, then repeat, and top with more mayo and / or ketchup.
