Vegan Bacon Double Del Cheeseburger

The Classic Burger by Del Taco, only VEGAN!
In my 20s, I lived within a mile of not one, but two Del Tacos. They were both open 24 hours and there was no way I wouldn't stop by one of them on the way home after a night of partying. Needless to say, I ate these like no tomorrow before going vegan, and what I remember the most was the sauce. It’s a solid burger, but the sauce is it’s crowning glory.
When doing research on the sauce, I found that most recipes called for mayo, buttermilk and lime. I followed that recipe (using Ripple milk with a splash of apple cider vinegar for the buttermilk), but found that it didn’t taste quite right, nor did it look right. I remember it having a slightly pinkish color, so I added a bit of ketchup and BINGO BONGO that was it.

Makes 1 Burger
Two 3 oz patties of plant-based meat
2 slices vegan cheese
2 slices of vegan bacon
1/2 cup shredded lettuce
2 slices tomato
2 Tbsp chopped onion
1 sesame seed bun
2 Tbsp vegan mayo
1 Tbsp ketchup
1 Tbsp lime juice
1 Tbsp plant milk
1/4 Tbsp apple cider vinegar
Let's make the Del Sauce first. Combine the plant milk and apple cider vinegar. Let them rest for a couple minutes, then add the rest of the sauce ingredients. Mix thoroughly and set aside.
Prep your veggies, shred lettuce, slice tomato, and chop your onions.
Grill buns in a bit of oil or vegan butter until golden brown. Set aside.
Press your burger patties so they match the circumference of your buns. Season with salt and pepper. Then over medium high heat, grill on each side for 3-4 minutes.
Add vegan bacon to the pan as well. Flipping as needed.
After you flip the patties, add a slice of cheese to each one and cover with a melting dome after adding a tablespoon of water to pan. The steam from the water will help melt the cheese.
Once Cheese is melted, assemble as follows; bottom bun, Del Sauce, lettuce, tomato, onion, both patties with melted cheese, vegan bacon, more Del Sauce, top bun.
