Vegan Air Fried Chick'n

Let's Air Fry some Vegan Chick'n that's been coated in crushed up Doritos!


At Thee Burger Dude, I tend to deep fry my Chick'n, but using an AIR FRYER is great too! Obviously, there's almost no oil, so it's not only lighter, but it's easier to clean up. It's super fast, and super easy too, so if you aren't into deep frying, then Air Frying is a great alternative!


For this recipe, I highly suggest some Doritos. I know that most Doritos aren't Vegan, but the Spicy Sweet Chili and Blaze flavors are, and they really add some amazing crunch and flavor. You can also use any other kind of chip you like, Potato Chips, Fritos, there's also some Takis flavors that are Vegan!


But if you don't wanna use chips, you could also use Corn Flakes or Panko Breadcrumbs. For the Corn Flakes, watch out for Vitamin D3 that a lot of the major cereal brands use. It is unfortunately not vegan (it's derived from Sheep's Wool if you can believe it!)



I also have instructions for this recipe if you want to use some Tofu instead of the Gardein products. Just freeze and thaw your tofu (at least once, but twice is nice), then press it, and then tear off bite size chunks. After that, the instructions are pretty much the same. The main difference is the ingredient amounts since a block of tofu is usually 14 ounces, and the Gardein packages come in 10 ounces.

A few tips for Air Fried Chick'n:

  • If you are using the Gardein Scallopini (you can also use their Chick'n Strips) make sure you thaw in the fridge overnight or on the counter top. I've found the counter top takes about an hour and it helps to leave them on a wire rack too. You can also cut them in quarters to help speed up the thawing process (once they've thawed enough that you can cut them).

  • The finer you crush up your corn flakes or chips, the easier they will stick to the chick'n. But if you have some bigger pieces in there, it will add some more contrast in the texture. I like to crush mine in the middle, so it's mostly ground up but with a decent amount of bigger flakes too.

  • If you are gonna preheat your Air Fryer, don't add the parchment paper, otherwise it will fly up into the coils and cause a fire!

  • Spray the parchment paper before you cook. You should also spray the Chick'n before you cook it, and also before and after you flip them.

  • Don't crowd the Air Fryer. If the Nuggets or Patties are touching then that won't allow the air to cook them and they'll steam / not get crispy.

RECIPE

for Gardein Scallopini

Makes 16 Nuggets

  • 1 package Gardein Scallopini

  • 1/2 cup plant based milk (unsweetened)

  • 1/2 Tbsp apple cider vinegar

  • 1/2 Tbsp hot sauce

  • 2 Tbsp flour

  • 2 Tbsp cornstarch

  • 1 tsp all purpose seasoning (or to taste)

  • 1 tsp baking powder

  • 1 1/4 cups crushed Spicy Sweet Chili Doritos or Corn Flakes, or Panko Breadcrumbs


INSTRUCTIONS for GARDEIN SCALLOPINI


  1. Thaw your Scallopini or Strips overnight in the fridge or on the countertop. Letting them thaw on a wire rack will speed up the process. The strips will thaw faster, but you can also quarter the Scallopini (once they've thawed enough to cut) to speed up the process too.

  2. Once your Chick'n is thawed, shape into whatever shapes you like. You can make patties with either a single or double patty by smashing 2 of them together. You can split a patty in half and make 2 chick'n fingers out of it. Or you can quarter them and make 4 nuggets per patty. Totally up to you! Once you are done, let them hang out in the fridge to keep firm.

  3. Prepare your dredging stations. Combine the plant based milk, apple cider vinegar and hot sauce in one bowl. Then combine the flour, cornstarch, seasoning and baking powder in another.

  4. If you are using Panko Breadcrumbs, add them to a bowl and season them with some garlic salt if you like.

  5. If you are using chips or corn flakes, add them to a bag and crush them until you have about 1 and 1/4 cup of crushed chips / corn flakes. You generally need to start with twice as much as you are going to end up with. So for instance, a cup of corn flakes will result in about 1/2 cup once you crush them.

  6. Now let's dredge the Chick'n. Dip them in the flour, and then the wet mixture, making sure to shake off the excess of both. Then coat them in the crushed chips / corn flake / panko, making sure to coat and not leave any wet spots. Add them to a wire rack to rest while you prep the air fryer.

  7. Take some parchment paper, and poke a decent amount of holes in it (I like to use a chopstick to poke holes). Lay down the parchment paper in the air fryer and spray lightly with some cooking spray.

  8. Add your Chick'n pieces, making sure not to crowd the air fryer, and then lightly spray them as well.

  9. Cook the Chick'n for 8 - 10 minutes at 390 degrees fahrenheit.

  10. When the Air Fryer dings, open it up, spray the Chick'n again, then flip them (careful not to burn your fingers!) and spray them once more. Cook for another 8 - 10 minutes at 390.

  11. Once the Air Fryer dings again, you're done! Serve it up however you like!

  12. Enjoy!


RECIPE

for Tofu

Makes 18 Nuggets

  • 14 oz Medium Firm Tofu

  • 3/4 cup plant based milk (unsweetened)

  • 3/4 Tbsp apple cider vinegar

  • 3/4 Tbsp hot sauce

  • 3 Tbsp flour

  • 3 Tbsp cornstarch

  • 1 1/2 tsp all purpose seasoning (or to taste)

  • 1 1/2 tsp baking powder

  • 2 cups crushed Spicy Sweet Chili Doritos or Corn Flakes, or Panko Breadcrumbs


INSTRUCTIONS for TOFU


  1. Freeze and thaw your tofu twice. If you're low on time and can only do it once, that's fine, but the texture will be better if you can do it twice.

  2. Press your tofu until all the excess liquid is out. There will be a lot!

  3. You can either tear off nuggets sized pieces, or you can carefully cut your tofu in thirds and then thirds again, for 18 nuggets. The former gives you more craggly texture, the latter gives you more control over the size of your nuggets. Up to you!

  4. Prepare your dredging stations. Combine the plant based milk, apple cider vinegar and hot sauce in one bowl. Then combine the flour, cornstarch, seasoning and baking powder in another.

  5. If you are using Panko Breadcrumbs, add them to a bowl and season them with some garlic salt if you like.

  11. When the Air Fryer dings, open it up, spray the Tofu again, then flip them (careful not to burn your fingers!) and spray them once more. Cook for another 8 - 10 minutes at 390.

  12. Once the Air Fryer dings again, you're done! Serve it up however you like!
