Breakfast Hoagies

I don't know why, but Breakfast Hoagies are not as ubiquitous as they should be, so I'm gonna tell it from the mountain!
This is less a recipe and more of a demo on using some of my Tofu Scramble, Cheese Sauce, and Rice Paper Bacon!
Plus, I want to make Breakfast Hoagies a thing! There's a lot of mysteries in our world, but the lack of Breakfast Hoagies is one of the most confounding ones. So I'm here to fix that!
Obviously you can customize these to your heart's content! For these, I simply used some Hash Browns, Rice Paper Bacon, Just Egg (though you can easily use some of my Tofu Scramble) Cheese Sauce and some Grilled Jalapeños all on a Hoagie Roll!
I suggest making a big batch of my cheese sauce, bacon and tofu scramble, and then you can have one of these every morning for a week! Meal planning at it's finest!

RECIPE
Makes 1 sandwich
1 Hoagie Roll
1 Hash Brown
1 - 2 Tbsp vegan mayo
4 oz vegan egg (Just or Tofu Scramble)
Few slices of Rice Paper Bacon
Cheese Sauce (use as much as you want!)
1 Jalapeno (sliced and seeded)
Tofu Scramble
Single Serving
3 oz medium firm tofu (pressed)
1 - 2 Tbsp plant milk
1 tsp nutritional yeast
1/8 tsp garlic salt
1/8 tsp turmeric
Dash of smoked paprika
Black pepper to taste
Black salt to taste (optional)
INSTRUCTIONS
Make the Cheese Sauce, Rice Paper Bacon and Tofu Scramble (if not using Just Egg)
Cook Hash Brown according to package instructions (or Air Fry at 380° F for 10 minutes flipping halfway through)
Split your roll, don't cut all the way, you want to keep a hinge so it stays closed and your sandwich doesn't fall apart. Then toast your roll with some vegan butter.
Grill your Jalapeños (you could also just use pickled jalapeños!)
Assemble hoagie as pictured above!
