Breakfast Big Mac

When you want a vegan Big Mac and it's before lunchtime, this is your Burger!

It was early one morning and unsurprisingly, I was craving a Big Mac. I thought, "if only there was a breakfast version of a Big Mac" and voila, this was born!

There's really only two things that separate this from a regular Big Mac. First is the breakfast sausage patty. I made it with some plant based meat and spices. You can either make yours like this, or use a store bought vegan sausage patty.

The other tweak was instead of a 2nd burger patty, I used a slice of tofu to create a vegan egg. I also put some nutritional yeast and turmeric in a bowl, and then dipped the tofu egg in to coat one side. This tastes good and looks cool, double win!

The Big Mac sauce is also simplified since I didn't feel like looking up what was in the real Big Mac sauce. The chili sauce I used is made by Heinz and it's essentially seasoned ketchup with vinegar. The sauce I made is equal parts vegan mayo, chili sauce, and then some more sweet relish and vinegar. It's freaking scrumptious!

In any case, the last little note is I suggest using some big sesame seed buns! I made this a few times with smaller buns, and it just didn't look or feel right, so make sure you got some BIG BUNS!

Makes 1 Sandwich

  • 1 slice vegan cheese

  • 1/2 cup shredded lettuce

  • 5-6 dill pickle slices

  • 1 sesame seed bun plus another bottom bun (for the middle)

  • 2 - 3 oz slice of tofu

  • 1/2 Tbsp nutritional yeast

  • 1 tsp turmeric

Breakfast Sausage

  • premade sausage patty (Gardein, Simple Truth etc)


  • 4 ounces plant-based meat

  • 1/4 tsp each of ground sage, smoked paprika, garlic powder

  • 1/2 Tbsp of maple syrup

  • Salt and pepper to taste

Big Mac Sauce

  • 1 Tbsp vegan mayo

  • 1 Tbsp chili sauce (Heinz)

  • 1/2 Tbsp sweet relish

  • Dash of white vinegar


  1. Press your tofu for about 20 minutes.

  2. While tofu is pressing, let's prepare everything else. First chop your lettuce and set aside.

  3. Combine ingredients for the sauce. ⁣⁣Set aside in the fridge.

  4. Pour the nutritional yeast and turmeric in shallow bowl or plate and mix. Coat one side of the tofu slice in it.

  5. To prepare your middle bun, use a serrated knife and shave off just the bottom of the extra bottom bun. ⁣⁣⁣

  6. Combine all ingredients for breakfast sausage in a bowl and mix well.

  7. Once tofu has been pressed, cut about 1/2 inch slice. Then using a cookie cutter, cut out a circular section. Reserve excess tofu for another meal.

  8. Heat up a pan and grill buns in a bit of oil or vegan butter until golden brown. Set aside. ⁣⁣⁣

  9. Press your plant based sausage into a patty so it matches the circumference of your buns.

  10. Add the sausage patty and tofu slice to the pan. Cook for 3 - 4 minutes.

  11. Flip the tofu egg and sausage patty. Add a slice of cheese to the sausage patty and cover with a melting dome. ⁣⁣⁣

  12. Once Cheese is melted, assemble as follows; Bottom Bun, Sauce, Lettuce, Patty w/ Cheese, Middle Bun, Sauce, Lettuce, Pickles, Tofu Egg, Sauce, Top Bun. ⁣⁣⁣

  13. ENJOY!⁣⁣
