Vegan Biscuit n' Gravy Sandwich

Biscuits n' Gravy in sandwich form! No forks given or needed on this one!


Have you ever been eating Biscuits n' Gravy, and it was so good, you just wanted to grab it with your hands and shove it in your face like an animal? No? Just me? Well in either case, I suggest you give this recipe a try and leave your knives and forks alone!


I'll be the first to admit I'm lazy, and that's why I used store-bought biscuits. There's a few that are accidentally vegan, as well as a few that are vegan on purpose. Pillsbury has a few varieties that are vegan, but as always, make sure to check the ingredients. Obviously feel free to make your favorite vegan biscuits if you have a recipe that you like too!


The sausage can be store bought or home made as well. I prefer homemade since I can adjust the spices and the size, but the convenience of store bought does have it's perks. The choice is yours!


For the star of the show, the gravy, we'll be making a simple roux, then add some plant-based milk and spices. The only thing to keep in mind with the roux is, if you are using something with a lot of fat for your crumbled sausage like Beyond or Impossible, you won't need as much butter. However if your plant-based sausage doesn't render any fat, use the recommended 2 Tbsp. Otherwise adjust based on the fat rendered. You can also leave out the sausage all together! Up to you!


The gravy is incredibly versatile and you can pile it on a plethora of things besides biscuits. Like potatoes, vegetables, and uh, did I mention potatoes?

RECIPE

Makes 2 Sandwiches (and leftover gravy)


  • 2 Biscuits

  • 2 slices vegan cheese

  • Green onions for garnish


Breakfast Sausage

  • premade sausage patty (Gardein, Simple Truth etc)

OR...

  • 4 ounces plant-based meat (Beyond Meat, Lightlife, etc)

  • 1/4 tsp each of ground sage, smoked paprika, garlic powder

  • 1/2 Tbsp of maple syrup

  • Salt and pepper to taste


Country Gravy

  • 1 cup plant-based ground sausage

  • 2 Tbsp vegan butter

  • 1/4 cup flour

  • 2 cups plant milk

  • 1/4 Tbsp garlic salt

  • 1/4 Tbsp black pepper

  • 1/4 tsp oregano

  • 1/4 tsp umami seasoning (optional)

  • Dash of cayenne and smoked paprika


INSTRUCTIONS


  1. Cook biscuits according to package instructions and keep warm in oven. Or make biscuits from scratch if you have a recipe you like!

  2. Let's make the gravy. If using ground sausage, add some oil to a pan on medium heat and then add sausage once oil is heated through. Cook the sausage until well browned. Remove from pan and reserve for later.

  3. Let's make the roux! Start by melting the butter in a pan over medium heat. Once it's melted add the flour a tablespoon at a time. Whisk each tablespoon of flour thoroughly before adding the next tablespoon.

  4. Cook the roux for 1-2 minutes and then add the milk in 1/2 cup increments. Pour it slowly and whisk at the same time to avoid lumps.

  5. Lower the heat and simmer the gravy. Add the spices and adjust seasonings to taste.

  6. Add the sausage back into the pan and stir into the gravy. Lower heat to low to keep warm, stirring occasionally.

  7. Now let's make the sausage patty. If using a premade patty, cook according to instructions. If making your own sausage, combine breakfast sausage ingredients. Roll into two 2 oz meatballs.

  8. Heat up a little oil in a pan over medium heat. Once the pan is hot, take your meatballs and place it in the pan. Using a spatula, SMASH each meatball into a patty. Cook for 3-4 minutes.

  9. Flip patty and add a slice of vegan cheese. Add a little water to the pan and cover immediately. The steam from the water will help melt the cheese. Cook for about 3 minutes.

  10. Once cheese is melted, remove from heat.

  11. Assemble as follows, biscuit, gravy, sausage patty w/cheese, more gravy, green onions, top biscuit!

  12. ENJOY!
